Deliciously sweet and healthy banana bread bites, perfect for a quick snack or breakfast!
Ingredients

- 2 cups rolled oats
- 2 very ripe bananas, peeled and sliced
- 1/4 cup dates, roughly chopped
- 3 tablespoons coconut oil, melted
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon (optional)
- 1 teaspoon baking powder
- 1/4 teaspoon sea salt
- 1/2 cup dark chocolate chips (optional)
Instructions
- Preheat the oven to 350°F and line a large baking sheet with parchment paper.
- In a large food processor, add the rolled oats and pulse until they are ground into a flour-like mixture. Transfer to a bowl and set aside.
- In the food processor, add the sliced bananas, chopped dates, melted coconut oil, maple syrup, vanilla extract, cinnamon, baking powder, and salt, and blend until well combined.
- Add the ground oats to the food processor and blend until well combined. Then remove the blade, add the chocolate chips, and stir them into the batter.
- Transfer the food processor container to the fridge and allow the batter to chill for 10 minutes. (This step is optional, although it ensures a more uniform shape to the bites.)
- Using a cookie scoop or a large spoon, scoop the batter into 2 tablespoon balls onto the baking sheet, leaving 1 to 2 inches between them.
- Transfer the baking sheet to the oven and bake for 18-20 minutes until the bottoms are lightly browned. Once baked, remove the baking sheet from the oven and, using a spatula, transfer the banana bread bites to a wire rack to cool slightly.
- The banana bread bites can be served warm. Any leftovers can be stored in an airtight container in the pantry for up to 4 days, the fridge for up to 7 days, or in the freezer for up to 4 months.
Notes
- Chilling the batter helps to shape the bites better.
- Feel free to add nuts or dried fruits for extra texture.
