Description

This delicious blueberry bundt cake is moist, flavorful, and easy to make.


Ingredients

  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup sour cream
  • 2 cups fresh or frozen blueberries
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 325°F and grease and flour a Bundt pan.
  2. Cream butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition.
  4. Whisk together flour, baking powder, and salt in a separate bowl.
  5. Alternate adding dry ingredients and sour cream to the batter, beginning and ending with flour. Mix gently.
  6. Toss blueberries lightly in flour and fold into the batter.
  7. Pour batter into prepared pan and smooth the top.
  8. Bake for 60–75 minutes or until a toothpick inserted comes out clean.
  9. Cool in pan for 15 minutes, then transfer to a wire rack to cool completely.

Notes

  • For best results, use fresh blueberries if available.
  • This cake can be served with a dusting of powdered sugar on top.
