- Crisp up the potatoes: Start by heating avocado oil in a large skillet over medium heat. Toss in the diced golden potatoes and season them with salt. Stir occasionally, cooking for about 10–12 minutes, or until they’re crispy on the outside and fork-tender inside. This step is key for achieving that perfect texture that holds up beneath all the toppings.
- Cook the beef taco filling: While the potatoes are finishing up, push them to one side of the skillet. Add the ground beef to the other side and begin browning it. Once it starts to cook through, sprinkle in taco seasoning, garlic powder, smoked paprika, and chili powder. Mix well and let everything simmer together for a few minutes to deepen the flavor. Add a couple tablespoons of water to keep it moist and help the spices blend into the beef.
- Combine and melt the cheese: Now comes the magic. Mix the cooked beef and crispy potatoes together in the skillet. Sprinkle the shredded Mexican cheese evenly over the top, reduce the heat to low, and cover the skillet with a lid. Let it sit for 5–7 minutes until the cheese is completely melted and gooey.
