Description

This creamy salmon fettuccine is a delightful blend of rich flavors and textures, perfect for a comforting meal.

Ingredients

Scale
  • 8 oz fettuccine or pasta of your choice
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 1 small onion, finely chopped
  • 1 cup cooked salmon, flaked
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon dried dill or 1 teaspoon fresh dill
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil and cook the pasta until al dente according to the package instructions. Drain and set aside, reserving about 1/2 cup of pasta water.
  2. Sauté the Aromatics: In a large skillet over medium heat, heat the olive oil. Add the chopped onion and cook until translucent—about 3 to 4 minutes. Stir in the minced garlic and cook for another 30 seconds until fragrant.
  3. Make the Creamy Sauce: Pour in the heavy cream and bring it to a gentle simmer. Stir in the Parmesan cheese and dill, allowing the cheese to melt and the sauce to thicken slightly. Season with salt and pepper to taste.
  4. Add the Salmon: Fold in the flaked cooked salmon, gently stirring it into the sauce. Let it warm through for about 2 to 3 minutes. Be careful not to break the salmon up too much—you want some nice chunks throughout.
  5. Toss with Pasta: Add the cooked pasta to the skillet and toss to coat in the creamy sauce. If needed, use a bit of the reserved pasta water to loosen the sauce and help it cling to the noodles.
  6. Serve and Garnish: Plate the pasta and garnish with chopped parsley for a burst of color and freshness. Serve warm and enjoy immediately.

Notes

  • For a lighter version, you can substitute half-and-half for the heavy cream.
  • Feel free to add your favorite vegetables to the dish for added nutrition.
