Description

This delicious Beefy Dorito Casserole is a hearty and flavorful dish that combines seasoned ground beef, vibrant vegetables, and crispy Doritos all topped with melted cheese. Perfect for family dinners!


Ingredients

  • 1 lb ground beef
  • 1 cup chopped onion
  • 1 oz taco seasoning
  • 10 oz diced tomatoes with green chilies, drained
  • 15 oz black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese, divided
  • 9 oz nacho cheese Doritos, lightly crushed

Instructions

  1. Preheat oven to 350°F and grease a 9×13 inch baking dish.
  2. In a large skillet over medium heat, cook ground beef and chopped onion until beef is fully browned. Drain excess grease.
  3. Stir in taco seasoning and diced tomatoes with green chilies. Simmer for 3 to 4 minutes until slightly thickened.
  4. Add black beans, corn, and sour cream. Stir until fully combined and creamy.
  5. Spread half of the crushed Doritos evenly in the bottom of the baking dish.
  6. Spoon half of the beef mixture over the chips and sprinkle with 1 cup shredded cheddar cheese.
  7. Repeat layers with remaining Doritos, remaining beef mixture, and top with remaining 1 cup shredded cheddar cheese.
  8. Bake for 20 to 25 minutes until cheese is melted and bubbly.
  9. Let rest for 5 to 10 minutes before slicing and serving.
