Description

A warm, rich chocolate soup garnished with heart-shaped sprinkles and fresh berries, perfect for a sweet treat.

Ingredients

Scale
  • 1 tbsp cornstarch
  • 2 tbsp milk (cold)
  • 1 cup + 2 tbsp (200g) semi-sweet chocolate chips
  • ⅔ cup (150ml) milk (whole milk ideally)
  • 1 tbsp vanilla bean paste (or seeds from 1 vanilla pod)
  • heart shaped sprinkles (to garnish)
  • freeze-dried raspberry powder
  • small heart-shaped cookies
  • fresh berries
  • a little unsweetened cocoa powder

Instructions

  1. Make a slurry by mixing the cornstarch with the COLD milk. Stir well to dilute.
  2. Put the chocolate chips in a bowl. Heat the milk over low heat until small bubbles appear around the edge of the saucepan. Do not boil!
  3. Pour the hot milk over the chocolate chips and leave for a couple of minutes. Add the vanilla paste.
  4. Using a small balloon whisk, stir the chocolate slowly starting from the centre and slowly increasing your range of motion. Stir until the chocolate is melted and smooth.
  5. Stir in the cornflour slurry and transfer back into the saucepan.
  6. Gently heat the chocolate soup, stirring with a whisk, until it starts to thicken.
  7. Remove from the heat and divide between two small bowls.
  8. Garnish your soup with heart-shaped candy, freeze-dried raspberry powder, fresh berries, sweet croutons, small cookie shapes or sprinkles. Serve warm.
