Description
A refreshing salad with cabbage, black beans, and a crunchy topping of Fritos.
Ingredients

- 4 cups shredded cabbage
- 1 cup corn kernels
- 1 cup black beans (rinsed & drained)
- 1 cup cherry tomatoes (halved)
- 3 green onions (sliced)
- 1 cup shredded cheddar cheese
- 1 handful fresh cilantro (chopped)
- 1 lime (juiced)
- 2 cups Fritos (crushed, added before serving)
- 1 cup ranch dressing
- 2 tbsp mayo or Greek yogurt
- 1 tbsp lime juice
- 0 tsp taco seasoning
Instructions
- Add shredded cabbage, tomatoes, green onions, corn, and black beans to a large bowl.
- Whisk ranch, mayo/Greek yogurt, taco seasoning, and lime juice until smooth.
- Pour dressing over salad ingredients and toss until fully coated.
- Fold in cheddar cheese and cilantro.
- Chill salad if not serving immediately.
- Add crushed Fritos right before serving and toss lightly.
Notes
- This salad is best served fresh, with the Fritos added just before serving for maximum crunch.
- You can adjust the dressing to your taste.
