Description

Delicious homemade pretzel bites that are chewy on the outside and soft on the inside.


Ingredients

  • 1 ½ cups warm water (110°F to 115°F)
  • 1 packet (2 ¼ teaspoons) active dry yeast
  • 1 tablespoon granulated sugar
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • ⅓ cup baking soda
  • 1 large egg, beaten (for egg wash)
  • Coarse sea salt, for sprinkling

Instructions

  1. In a large bowl, combine the warm water, sugar, and yeast. Allow it to sit for about 5 minutes until it becomes frothy.
  2. In another bowl, mix the flour and salt together.
  3. Gradually add the flour mixture to the yeast mixture, mixing until a rough dough forms.
  4. Transfer the dough to a floured surface and knead for about 5 minutes until smooth and elastic.
  5. Place the dough in a bowl coated with olive oil, cover it with a clean kitchen towel, and let it rise in a warm place for about 30 minutes, or until it has doubled in size.
  6. Preheat your oven to 450°F (232°C). In a large pot, bring about 10 cups of water to a boil and carefully stir in the baking soda.
  7. After the dough has risen, punch it down and divide it into small pieces. Roll each piece into a rope about 1 inch thick, then cut it into bite-sized pieces.
  8. Carefully drop a few pretzel bites into the boiling baking soda bath for about 30 seconds, then remove them with a slotted spoon and place them on a lined baking sheet.
  9. Brush each pretzel bite with the beaten egg and sprinkle with coarse sea salt.
  10. Bake in the preheated oven for 10-12 minutes, or until golden brown.
  11. Remove from the oven and allow the pretzel bites to cool slightly before enjoying.

Notes
