Instructions
- Start by placing your chicken thighs in a bowl with buttermilk, paprika, garlic powder, onion powder, salt, and black pepper. Mix to coat thoroughly. Cover and refrigerate for at least 1 hour, but overnight is best for the most flavor-packed result.
- In a shallow bowl, whisk together flour, cornstarch, paprika, garlic powder, cayenne, and salt. This seasoned dredge is what gives your chicken that golden, crispy exterior.
- Remove the chicken from the marinade, letting the excess drip off. Press each piece firmly into the flour mixture until well coated. For extra crunch, dip them back into the buttermilk and dredge again. Set the coated chicken on a rack and let it rest for 10 minutes. This helps the crust adhere during frying.
- Heat oil in a deep skillet or pot to 350°F (175°C). Fry the chicken pieces for about 5–7 minutes per side, or until deeply golden and cooked through. The internal temperature should reach 165°F (74°C). Drain on a wire rack.
- While the chicken rests, combine honey, hot sauce, and red pepper flakes in a small saucepan. Warm gently over low heat, just until the mixture is runny and fragrant. Stir well.
- Toast your brioche buns until golden. Spread a little mayo on the bottom bun, then layer on lettuce, the crispy chicken, turkey ham if using, and plenty of pickles. Drizzle generously with hot honey and crown it with the top bun.
