Ingredients

- 8 oz fettuccine or penne pasta
- 1 lb shrimp (peeled and deveined)
- 1 can (14 oz) diced tomatoes
- 1 cup heavy cream
- 1 cup fresh basil (chopped)
- 4 cloves garlic (minced)
- 1 medium onion (diced)
- 2 tbsp olive oil
- ½ cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions until al dente; reserve 1 cup of pasta water before draining.
- In a large skillet, heat olive oil over medium heat. Sauté diced onion until translucent.
- Add minced garlic and cook until fragrant (about 30 seconds), then add canned tomatoes with juices; simmer for 5 minutes.
- Stir in heavy cream, reduce heat, and use reserved pasta water as needed to adjust sauce consistency.

- This dish pairs well with a side salad.
- You can substitute chicken for shrimp if desired.
