Description

A delicious creamy chicken and potato bake, perfect for comfort food lovers.

Ingredients

Scale
  • 800 g chicken breast (diced into bite-sized pieces)
  • 34 cloves garlic (finely chopped)
  • 2 teaspoons onion powder
  • 2 teaspoons dried mixed herbs
  • 1 teaspoon chili flakes
  • 2 teaspoons smoked paprika
  • 1 teaspoon salt
  • 2 teaspoons olive oil (for cooking)
  • 800 g raw potatoes (cut into cubes)
  • 1 teaspoon garlic powder
  • 1 teaspoon mixed herbs
  • 1 teaspoon chili flakes (to taste)
  • 1 teaspoon paprika
  • 120 ml milk (of your choice)
  • 100 g light cream cheese
  • 40 g grated Parmesan
  • 50 g shredded mozzarella
  • fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine diced chicken with chopped garlic, onion powder, dried herbs, chili flakes, smoked paprika, and salt. Stir until the chicken is evenly coated with seasonings.
  3. Heat olive oil in a skillet over medium heat. Add the seasoned chicken and cook until golden brown and no longer pink, about 8-10 minutes.
  4. While the chicken is cooking, bring a pot of salted water to a boil. Add cubed potatoes and cook until fork-tender, about 10-15 minutes. Drain and set aside.
  5. In the same pot, toss the drained potatoes with garlic powder, mixed herbs, chili flakes, and paprika. Make sure they’re well-coated.
  6. In a mixing bowl, whisk together milk, light cream cheese, grated Parmesan, and shredded mozzarella until smooth and creamy.
  7. Gently fold the sautéed chicken into the seasoned potatoes. Pour the creamy sauce over the top, ensuring everything is coated.
  8. Transfer the mixture to a baking dish and bake for about 20-25 minutes, or until the cheese is bubbling and golden on top.
