Ingredients

  • 400 g chicken thighs, cut into small pieces
  • 2 tbsp soy sauce
  • ½ tbsp dark soy sauce
  • ½ tbsp oyster sauce
  • ½ tsp black pepper powder (adjust to taste)
  • 2 tbsp corn starch
  • 2 cups scallions, chopped (separate white and green parts)
  • 4 tbsp oil

Instructions

  1. In a mixing bowl, combine the chicken pieces with soy sauce, dark soy sauce, oyster sauce, black pepper powder, and corn starch. Mix well to coat the chicken evenly, then allow it to marinate for 10 minutes.
  2. While the chicken marinates, chop the scallions, keeping the white and green parts separate.
  3. Heat 4 tablespoons of oil in a non-stick pan over medium heat. Add the marinated chicken pieces and cook them thoroughly, stirring occasionally, until the chicken is no longer pink inside and has a slight golden exterior.
  4. Add the white parts of the scallions to the pan with the chicken. Cook until the scallion whites soften, about 2-3 minutes. For larger or bone-in chicken pieces, cover the pan with a lid to ensure even cooking.
  5. Finally, stir in the green parts of the scallions and cook for an additional 10 to 20 seconds to maintain their freshness and color.
  6. Taste and adjust seasoning by sprinkling additional black pepper or extra scallions if desired. Serve hot with steamed rice or noodles for a complete meal.
