Delicious shrimp rolls made with fresh shrimp, served in toasted buns with a creamy dressing.

- 1 pound fresh shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 teaspoon Old Bay seasoning
- Salt and pepper to taste
- ¼ cup mayonnaise
- 1 tablespoon freshly squeezed lemon juice
- 1 tablespoon chopped fresh dill or parsley
- 4 hot dog buns or split-top rolls
- 1 cup shredded lettuce (iceberg or romaine)
- Optional: sliced tomatoes for garnish
Instructions
- In a pot of boiling salted water, cook the shrimp for about 2-3 minutes until they turn pink and opaque. Drain and let them cool slightly.
- In a large bowl, combine the olive oil, Old Bay seasoning, salt, and pepper. Toss the cooked shrimp in this mixture until well coated.
- In another bowl, whisk together the mayonnaise, lemon juice, and chopped herbs until smooth and combined.
- Add the seasoned shrimp to the dressing and gently mix until all shrimp are coated.
- While the shrimp mixture sits, lightly toast the hot dog buns or rolls in a skillet until golden brown.
- Place shredded lettuce in the bottom of each roll, then generously spoon the shrimp mixture on top.
- If desired, add sliced tomatoes on top for extra flavor and color.
