Description

This delicious strawberry banana bread combines the sweetness of ripe bananas and strawberries, with a rich chocolatey touch.


Ingredients

  • 3 large ripe bananas (1 cup mashed)
  • ¼ cup unsalted butter (melted or coconut oil)
  • 1 large egg (room temperature)
  • ¼ cup Greek yogurt (Vanilla works)
  • ⅓ cup brown sugar (or cane sugar (1/2 for sweeter option))
  • 2 teaspoons vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup chopped strawberries (plus 23 strawberries for topping)
  • ⅓ cup dark chocolate chips (plus more for topping)

Instructions

  1. Preheat the oven to 350F and line a 9×5 loaf pan with parchment paper or cooking spray.
  2. In a bowl, add the mashed bananas, melted butter or coconut oil, egg, Greek yogurt, brown sugar, and vanilla extract. Whisk to combine and set aside.
  3. In a separate bowl, mix together the flour, baking powder, baking soda, and salt.
  4. Mix the flour mixture and the egg mixture with a spatula until combined. Do not overmix.
  5. Add in the chopped strawberries and dark chocolate chips. Fold them into the batter.
  6. Place the batter in the prepared pan and top with more chocolate chips and sliced strawberries if you like.
  7. Bake for 50-55 minutes, or until a toothpick inserted in the center comes out clean. Allow the bread to cool fully before slicing. Serve and Enjoy.
