Description

Deliciously tangy lemon bars with a buttery crust and powdered sugar dusting.


Ingredients

  • 1 cup unsalted butter (softened)
  • 1/2 cup granulated sugar (for crust)
  • 2 cups all-purpose flour (divided)
  • 1/4 teaspoon salt
  • 4 large eggs (room temperature)
  • 1 1/2 cups granulated sugar (for filling)
  • 1/4 cup all-purpose flour (for filling)
  • 2/3 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
  2. Cream softened butter and 1/2 cup sugar together until light and fluffy.
  3. Mix in 2 cups flour and salt just until combined.
  4. Press the dough evenly into the prepared baking pan.
  5. Bake crust for 18–20 minutes until lightly golden.
  6. While crust bakes, whisk together eggs, 1 1/2 cups sugar, 1/4 cup flour, lemon zest, and fresh lemon juice until smooth.
  7. Pour lemon mixture over the warm crust.
  8. Bake for an additional 20–25 minutes until center is set and no longer jiggly.
  9. Cool completely at room temperature.
  10. Refrigerate for at least 2 hours before slicing.
  11. Dust with powdered sugar just before serving.
