- 1/2 cup granulated sugar (for crust)
- 2 cups all-purpose flour (divided)
- 1/4 teaspoon salt
- 4 large eggs (room temperature)
- 1 1/2 cups granulated sugar (for filling)
- 1/4 cup all-purpose flour (for filling)
- 2/3 cup fresh lemon juice
- 1 tablespoon lemon zest
- Powdered sugar for dusting
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
- Cream softened butter and 1/2 cup sugar together until light and fluffy.
- Mix in 2 cups flour and salt just until combined.
- Press the dough evenly into the prepared baking pan.
- Bake crust for 18–20 minutes until lightly golden.
- While crust bakes, whisk together eggs, 1 1/2 cups sugar, 1/4 cup flour, lemon zest, and fresh lemon juice until smooth.
- Pour lemon mixture over the warm crust.
- Bake for an additional 20–25 minutes until center is set and no longer jiggly.
- Cool completely at room temperature.
- Refrigerate for at least 2 hours before slicing.
- Dust with powdered sugar just before serving.
