Description
A refreshing apple and celery salad with walnuts and cranberries, drizzled with a light dressing.
Ingredients

- 3 large crisp apples (such as Honeycrisp or Granny Smith), cored and diced
- 6 celery stalks, sliced with leaves chopped
- 1 cup walnuts, toasted
- ½ cup dried cranberries
- ¼ cup fresh parsley, finely chopped
- 3 tablespoons extra virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon honey
- ½ teaspoon sea salt
- ¼ teaspoon freshly ground black pepper
Instructions
- Wash and core the apples; cut them into ½-inch pieces.
- Slice celery stalks into ¼-inch thick pieces and chop leaves.
- Toast walnuts in a dry skillet over medium-low heat for about 5-7 minutes until golden; roughly chop.
- In a bowl, whisk together olive oil, lemon juice, honey, sea salt, and black pepper for the dressing.
- In a large mixing bowl, combine apples, celery stalks and leaves, walnuts, dried cranberries, and parsley. Drizzle most of the dressing over the salad and toss gently.
- Add in the remaining chopped celery leaves and let the salad rest for 10-15 minutes before serving.
