Description

A refreshing apple and celery salad with walnuts and cranberries, drizzled with a light dressing.


Ingredients

  • 3 large crisp apples (such as Honeycrisp or Granny Smith), cored and diced
  • 6 celery stalks, sliced with leaves chopped
  • 1 cup walnuts, toasted
  • ½ cup dried cranberries
  • ¼ cup fresh parsley, finely chopped
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon honey
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. Wash and core the apples; cut them into ½-inch pieces.
  2. Slice celery stalks into ¼-inch thick pieces and chop leaves.
  3. Toast walnuts in a dry skillet over medium-low heat for about 5-7 minutes until golden; roughly chop.
  4. In a bowl, whisk together olive oil, lemon juice, honey, sea salt, and black pepper for the dressing.
  5. In a large mixing bowl, combine apples, celery stalks and leaves, walnuts, dried cranberries, and parsley. Drizzle most of the dressing over the salad and toss gently.
  6. Add in the remaining chopped celery leaves and let the salad rest for 10-15 minutes before serving.
