Description
A delicious buffalo chicken rice bowl topped with fresh vegetables and cheese.

- 1/2 cup hot sauce
- 1/4 cup butter
- 1 lb chicken breast (cut into pieces)
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 2 cups cooked rice
- 2 cups shredded lettuce
- 1 cup cherry tomatoes (halved)
- 1 cup shredded cheddar cheese
- to taste ranch or blue cheese dressing
- to taste green onions
- optional avocado slices
Instructions
- Combine hot sauce and melted butter in a small bowl; stir until blended and set aside.
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken pieces, seasoning with salt and black pepper; cook for 5–7 minutes until browned and fully cooked.
- Reduce heat to low; pour buffalo sauce over the chicken, stirring to coat evenly; simmer for 3–5 minutes.
- Divide cooked rice among serving bowls.
- Top with buffalo chicken, shredded lettuce, and cherry tomatoes.
- Sprinkle shredded cheddar cheese and drizzle with ranch or blue cheese dressing.
- Garnish with green onions and optional avocado slices. Serve immediately while hot.
Notes
- This recipe is great for meal prep as it stores well in the refrigerator.
- Feel free to adjust the level of spiciness by adding more or less hot sauce.
