Description

A delicious buffalo chicken rice bowl topped with fresh vegetables and cheese.


Ingredients

  • 1/2 cup hot sauce
  • 1/4 cup butter
  • 1 lb chicken breast (cut into pieces)
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 cups cooked rice
  • 2 cups shredded lettuce
  • 1 cup cherry tomatoes (halved)
  • 1 cup shredded cheddar cheese
  • to taste ranch or blue cheese dressing
  • to taste green onions
  • optional avocado slices

Instructions

  1. Combine hot sauce and melted butter in a small bowl; stir until blended and set aside.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add chicken pieces, seasoning with salt and black pepper; cook for 5–7 minutes until browned and fully cooked.
  4. Reduce heat to low; pour buffalo sauce over the chicken, stirring to coat evenly; simmer for 3–5 minutes.
  5. Divide cooked rice among serving bowls.
  6. Top with buffalo chicken, shredded lettuce, and cherry tomatoes.
  7. Sprinkle shredded cheddar cheese and drizzle with ranch or blue cheese dressing.
  8. Garnish with green onions and optional avocado slices. Serve immediately while hot.
