Description

Delicious cookies with a cappuccino swirl that are perfect for coffee lovers!


Ingredients

  • 1 cup (226g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 ¼ cups (280g) all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1 tbsp instant espresso powder
  • 2 tbsp unsweetened cocoa powder
  • 1 tbsp hot water

Instructions

  1. Make the Base Dough: In a large mixing bowl, cream the softened butter and sugar until light and fluffy—this usually takes about 2 to 3 minutes with an electric mixer. Add in the egg and vanilla extract and continue beating until smooth.
  2. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, stirring until the dough forms and pulls away from the sides of the bowl.
  3. Prepare the Cappuccino Swirl: In a small bowl, mix the espresso powder, cocoa powder, and hot water into a smooth paste. Scoop out about ⅓ of the cookie dough and mix it thoroughly with this cappuccino paste until fully combined. You’ll now have one portion of dark coffee dough and one portion of plain dough.
  4. Create the Swirl: Roll out both doughs separately on parchment paper into rectangles of roughly the same size—about ¼ inch thick. Carefully place the cappuccino dough over the plain dough and gently press together. Using the parchment paper to assist, roll the dough tightly into a log, starting from the short end. Wrap the log in parchment or plastic wrap and refrigerate for at least 2 hours, or until firm.
  5. Slice and Bake: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. Using a sharp knife, slice the dough log into ¼-inch rounds and place them on the prepared baking sheet, spacing them about an inch apart.
  6. Bake for 10 to 12 minutes, or until the edges are just beginning to turn golden. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
