A delicious and easy recipe for chicken fajita puff pastry, perfect for a quick dinner or appetizer.

- 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 small onion, sliced
- 2 tbsp olive oil
- 1 tbsp fajita seasoning
- 1 tsp garlic powder
- Salt and black pepper to taste
- 1 sheet frozen puff pastry, thawed
- 1 cup shredded Mexican blend cheese
- Optional: Sour cream, salsa, guacamole for serving
Instructions
- In a large skillet, heat olive oil over medium-high heat. Add chicken pieces and cook for 5-6 minutes until no longer pink.
- Add sliced onions and bell peppers to the skillet. Sprinkle with fajita seasoning, garlic powder, salt, and pepper.
- Cook for another 5-7 minutes, stirring occasionally, until vegetables are tender and chicken is cooked through. Remove from heat and let cool slightly.
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- On a lightly floured surface, roll out the puff pastry sheet slightly. Transfer it to the prepared baking sheet.
- Sprinkle half of the shredded cheese over the center of the pastry, leaving a 1-inch border around the edges.
- Spoon the chicken fajita filling evenly over the cheese. Top with the remaining cheese.
- Fold the edges of the pastry up and over the filling, pinching the corners to seal. You can brush the pastry with a beaten egg for a golden finish (optional).
- Bake for 20-25 minutes, or until the pastry is puffed and golden brown.
- Let the puff pastry cool for 5 minutes before slicing.
- Serve warm with sour cream, salsa, or guacamole on the side.
Notes
- Can be made ahead of time and refrigerated before baking.
- For a spicier kick, add jalapeños to the filling.
