Ingredients

  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small onion, sliced
  • 2 tbsp olive oil
  • 1 tbsp fajita seasoning
  • 1 tsp garlic powder
  • Salt and black pepper to taste
  • 1 sheet frozen puff pastry, thawed
  • 1 cup shredded Mexican blend cheese
  • Optional: Sour cream, salsa, guacamole for serving

Instructions

  1. In a large skillet, heat olive oil over medium-high heat. Add chicken pieces and cook for 5-6 minutes until no longer pink.
  2. Add sliced onions and bell peppers to the skillet. Sprinkle with fajita seasoning, garlic powder, salt, and pepper.
  3. Cook for another 5-7 minutes, stirring occasionally, until vegetables are tender and chicken is cooked through. Remove from heat and let cool slightly.
  4. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  5. On a lightly floured surface, roll out the puff pastry sheet slightly. Transfer it to the prepared baking sheet.
  6. Sprinkle half of the shredded cheese over the center of the pastry, leaving a 1-inch border around the edges.
  7. Spoon the chicken fajita filling evenly over the cheese. Top with the remaining cheese.
  8. Fold the edges of the pastry up and over the filling, pinching the corners to seal. You can brush the pastry with a beaten egg for a golden finish (optional).
  9. Bake for 20-25 minutes, or until the pastry is puffed and golden brown.
  10. Let the puff pastry cool for 5 minutes before slicing.
  11. Serve warm with sour cream, salsa, or guacamole on the side.

  • For a spicier kick, add jalapeños to the filling.
