- 1 can (14 oz) diced tomatoes
- 1 can (15 oz) white beans, drained and rinsed
- 2 cups seafood stock or chicken broth
- 1 cup heavy cream
- 1 lb raw shrimp, peeled and deveined
- 1 cup mixed seafood (such as crab meat or scallops)
- 1 cup corn kernels
- ½ cup shredded cheddar cheese
- 2 tablespoons chopped fresh cilantro
- 1 tablespoon lime juice
Instructions
- Start with the aromatics – Heat olive oil in a large pot over medium heat. Add diced onion and cook for about 3–4 minutes until soft and fragrant. Stir in the garlic and bell pepper and cook another minute.
- Build the spice base – Sprinkle in the cumin, chili powder, paprika, salt, and black pepper. Stir the spices into the vegetables so they toast slightly in the oil.
- Add the hearty ingredients – Pour in the diced tomatoes, white beans, and seafood stock. Stir everything together and bring the mixture to a gentle simmer. Let it cook for about 10 minutes.
- Make it creamy – Reduce the heat and slowly stir in the heavy cream. The broth will turn beautifully creamy.
- Add the seafood – Gently add the shrimp, mixed seafood, and corn. Cook for 4–5 minutes until the shrimp turn pink and tender.
- Finish with flavor – Stir in shredded cheddar cheese, cilantro, and lime juice. Serve hot, with crusty bread or warm tortillas for dipping.
