  • 1 can (15 oz) white beans, drained and rinsed
  • 2 cups seafood stock or chicken broth
  • 1 cup heavy cream
  • 1 lb raw shrimp, peeled and deveined
  • 1 cup mixed seafood (such as crab meat or scallops)
  • 1 cup corn kernels
  • ½ cup shredded cheddar cheese
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon lime juice

Instructions

  1. Start with the aromatics – Heat olive oil in a large pot over medium heat. Add diced onion and cook for about 3–4 minutes until soft and fragrant. Stir in the garlic and bell pepper and cook another minute.
  2. Build the spice base – Sprinkle in the cumin, chili powder, paprika, salt, and black pepper. Stir the spices into the vegetables so they toast slightly in the oil.
  3. Add the hearty ingredients – Pour in the diced tomatoes, white beans, and seafood stock. Stir everything together and bring the mixture to a gentle simmer. Let it cook for about 10 minutes.
  4. Make it creamy – Reduce the heat and slowly stir in the heavy cream. The broth will turn beautifully creamy.
  5. Add the seafood – Gently add the shrimp, mixed seafood, and corn. Cook for 4–5 minutes until the shrimp turn pink and tender.
  6. Finish with flavor – Stir in shredded cheddar cheese, cilantro, and lime juice. Serve hot, with crusty bread or warm tortillas for dipping.
