Description

This delicious crockpot chicken chili is easy to prepare and perfect for a comforting meal.


Ingredients

  • 34 boneless, skinless chicken breasts
  • 8 oz cream cheese (full-fat preferred)
  • 2 cups chicken broth
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14 oz) fire-roasted diced tomatoes
  • 2 bell peppers (any color), chopped
  • 1 medium onion, chopped
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • Tortilla chips or cornbread for serving

Instructions

  1. Place the boneless chicken breasts at the bottom of the crockpot.
  2. Layer chopped bell peppers and onions on top.
  3. Add black beans and diced tomatoes (with juices) to the pot; mix gently.
  4. Sprinkle chili powder, cumin, and garlic powder over the mixture.
  5. Pour in chicken broth and add blocks of cream cheese on top.
  6. Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken shreds easily.
  7. Stir well before serving with shredded cheese or fresh cilantro.
