Description
A delicious and flaky pie filled with grated potatoes and onions.
Ingredients

- 500 grams Plain Flour
- 200 milliliters Lukewarm Water
- 100 milliliters Sunflower Oil
- 1 teaspoon Salt
- 600 grams Potatoes (waxy variety)
- 1 medium Yellow Onion
- 1 teaspoon Ground Black Pepper
- 2 tablespoons Additional Sunflower Oil or Butter
Instructions
- In a large mixing bowl, combine flour and salt. Gradually add lukewarm water and sunflower oil, mixing until the dough comes together. Knead for about 10 minutes until smooth, then let it rest for 30 minutes.
- Grate the potatoes and chop the onions, then mix them with salt, pepper, and a splash of oil. Allow the mixture to sit for about 10 minutes to prevent browning and enhance flavors.
- On a lightly floured surface, roll and stretch the rested dough until it’s paper-thin. Trim the edges to ensure uniform thickness.
- Take the potato mixture and place it along one long edge of the rolled dough. Drizzle with a little oil, then carefully roll the dough tightly into a log shape.
- Cut the rolled log into lengths or coil it to fit into a greased baking dish. Brush the top with oil, and bake in a preheated oven at 200°C (180°C fan) for 40-50 minutes until golden brown.
- Halfway through baking, sprinkle a little water over the pie to add moisture. Once baked, allow to rest for a few minutes for easier slicing and serving.
Notes
- Substitute whole wheat flour for a denser texture.
- Adjust water temperature for smoother kneading.
- Can replace sunflower oil with olive oil for different flavor.
- Use Yukon Gold potatoes for similar results if waxy variety is not available.
- Shallots can be swapped for yellow onion for a milder taste.
- Ground black pepper is optional if preferred.
