Description

Delicious and fun cupcakes decorated with candy corn and chocolate chips, perfect for any occasion!


Ingredients

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter (softened)
  • 2 large eggs
  • 1/2 cup milk
  • 1 tbsp baking powder
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1 cup powdered sugar
  • 1/2 cup unsalted butter (softened)
  • 2 tbsp milk
  • 1/2 tsp vanilla extract
  • 12 pieces candy corn (for beaks)
  • 24 pieces chocolate chips (for eyes)
  • 1 cup shredded coconut (optional, for nest effect)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the milk and vanilla extract.
  5. In another bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Divide the batter evenly among the cupcake liners.
  8. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow cupcakes to cool completely before frosting.
  10. In a mixing bowl, beat together the softened butter, powdered sugar, milk, and vanilla extract until smooth and creamy.
  11. Add yellow food coloring until the desired shade is reached.
  12. Using a piping bag, frost the cooled cupcakes with the yellow frosting.
  13. Place two chocolate chips on each cupcake for eyes and a candy corn piece for the beak.
  14. If desired, sprinkle shredded coconut around the base of the cupcakes to resemble a nest.

Notes

  • Make sure to soften the butter before using it for a better texture.
