Description
A refreshing fava bean salad with avocado and cherry tomatoes.
Ingredients

- 2 cups cooked fava beans (peeled and cooked)
- 1 large ripe avocado (diced)
- 1 cup cherry tomatoes (halved)
- 1/4 cup red onion (finely chopped)
- 1/4 cup fresh parsley (chopped)
- 2 tablespoons olive oil (extra virgin)
- 1 tablespoon lemon juice (freshly squeezed)

- to taste black pepper
Instructions
- In a mixing bowl, combine the cooked fava beans, diced avocado, halved cherry tomatoes, chopped red onion, and parsley.
- Drizzle with olive oil and lemon juice, then season with salt and black pepper to taste.
- Gently toss the salad to combine all ingredients without mashing the avocado.
- Serve immediately or chill in the refrigerator for 15 minutes before serving.
Notes
- This salad is best served fresh but can be chilled to enhance the flavors.
