Description

A refreshing fava bean salad with avocado and cherry tomatoes.


Ingredients

  • 2 cups cooked fava beans (peeled and cooked)
  • 1 large ripe avocado (diced)
  • 1 cup cherry tomatoes (halved)
  • 1/4 cup red onion (finely chopped)
  • 1/4 cup fresh parsley (chopped)
  • 2 tablespoons olive oil (extra virgin)
  • 1 tablespoon lemon juice (freshly squeezed)

Instructions

  1. In a mixing bowl, combine the cooked fava beans, diced avocado, halved cherry tomatoes, chopped red onion, and parsley.
  2. Drizzle with olive oil and lemon juice, then season with salt and black pepper to taste.
  3. Gently toss the salad to combine all ingredients without mashing the avocado.
  4. Serve immediately or chill in the refrigerator for 15 minutes before serving.
