Goat Cheese and Fig Cookies

Description

Delicious cookies filled with creamy goat cheese and fresh figs, drizzled with honey and sprinkled with thyme.


Ingredients

  • 1 cup (125g) all-purpose flour
  • 1/2 cup (80g) fine cornmeal
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk
  • 100g goat cheese, cut into small cubes
  • 68 fresh figs, sliced into wedges
  • 1 tablespoon honey (optional)
  • Fresh thyme leaves (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking and promote even browning.
  2. In a medium bowl, whisk together flour, cornmeal, baking powder, baking soda, and salt until evenly combined and free of lumps.
  3. In a separate bowl, beat softened butter and sugar for 2–3 minutes until the mixture looks pale, light, and fluffy in texture.
  4. Mix in the egg and vanilla extract until fully incorporated and the mixture appears smooth and slightly glossy.
  5. Gradually add the dry mixture into the butter mixture, stirring gently. Add milk and mix just until the dough comes together without overworking it.
  6. Scoop about 2 tablespoons of dough, roll into a ball, and place on the prepared baking sheet. Lightly press the center of each dough ball with your thumb.
  7. Press a cube of goat cheese into the center of each cookie and top with a fig wedge, gently pressing it into the dough.
  8. Bake for 12–15 minutes until the edges are lightly golden while the centers remain soft.
  9. Allow cookies to cool slightly on the baking sheet. Drizzle with honey and sprinkle with fresh thyme if using before serving.
