Ingredients

  • 2 ripe avocados, diced

  • 1 tablespoon olive oil
  • Salt, to taste
  • 1 tablespoon fresh chopped cilantro
  • Extra lime wedges

Instructions

  1. Marinate the Chicken: Whisk together olive oil, lime zest and juice, honey, mustard, minced garlic, cumin, salt, and pepper. Slice the chicken breasts in half lengthwise and marinate for at least 30 minutes.
  2. Cook the Chicken: Heat a grill pan or skillet over medium heat. Cook the chicken for 4–5 minutes per side until charred and cooked through. Let rest, then slice into bite-sized pieces.
  3. Prepare the Avocado Mixture: Combine diced avocado with lime juice, chopped cilantro, and salt and pepper. Mash slightly for creamier texture or leave chunky.
  4. Make the Rice Base: Mix cooked rice with olive oil, chopped cilantro, and a pinch of salt.
  5. Assemble the Stack: Layer rice, avocado mixture, and sliced chicken in a bowl or jar. Garnish with lime juice and cilantro if desired.
