A refreshing Mediterranean salad featuring celery, onion, and a zesty dressing.
Ingredients

- 1 bunch celery (about 10 stalks)
- 1 medium red onion, thinly sliced
- 2 garlic cloves, finely chopped
- 1/2 cup red apple vinegar
- 1/3 cup olive oil
- 2 1/2 tablespoons capers, coarsely chopped
- 1 tablespoon chopped oregano
- 1 tablespoon chopped parsley
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
Instructions
- Cut the celery stalks on a bias into ½-inch slices and coarsely chop the leaves. Place in a large mixing bowl.
- Add the sliced onion, chopped garlic, vinegar, olive oil, capers, oregano, parsley, salt, black pepper, and red pepper flakes to the bowl.
- Toss all ingredients until well combined. Adjust seasonings to taste.
- Cover the bowl with plastic wrap or transfer it to a refrigerator-safe container. Marinate in the refrigerator for at least 1 hour or up to 4 hours.
- Before serving, toss again to ensure even distribution of flavors.
Notes
- This salad can be served chilled or at room temperature.
- Marinating for longer enhances the flavors.
