Description

A refreshing Mediterranean salad featuring celery, onion, and a zesty dressing.


Ingredients

  • 1 bunch celery (about 10 stalks)
  • 1 medium red onion, thinly sliced
  • 2 garlic cloves, finely chopped
  • 1/2 cup red apple vinegar
  • 1/3 cup olive oil
  • 2 1/2 tablespoons capers, coarsely chopped
  • 1 tablespoon chopped oregano
  • 1 tablespoon chopped parsley
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes

Instructions

  1. Cut the celery stalks on a bias into ½-inch slices and coarsely chop the leaves. Place in a large mixing bowl.
  2. Add the sliced onion, chopped garlic, vinegar, olive oil, capers, oregano, parsley, salt, black pepper, and red pepper flakes to the bowl.
  3. Toss all ingredients until well combined. Adjust seasonings to taste.
  4. Cover the bowl with plastic wrap or transfer it to a refrigerator-safe container. Marinate in the refrigerator for at least 1 hour or up to 4 hours.
  5. Before serving, toss again to ensure even distribution of flavors.
